When Moles Attack

One fall day, I was looking at the garden and I noticed a series of mole hills all along my row of Jerusalem Artichokes. Worried that I had lost my crop, I grabbed a camera and this is what I found.

Jerusalem Artichokes, also called Sunchokes, are a great permaculture plant because they are perennial and produce tubers that are edible for humans. The tubers can be prepared the same way you would prepare potatoes by boiling, steaming, or baking. I recommend caution when you first try them as they contain a fiber called inulin that can cause flatulence in some people. If you are susceptible to the gas causing quality of Jerusalem artichokes they can still be eaten in moderation or used as an animal feed instead; animals can eat both the tubers and the leaves.
