Dutch Soesjes/ cream puffs

These soesjes are very known in Holland but they are originally from Italy introduced to the French Court. If you would like to know how to pronounce it, it is pronounced as Sooshes. The original name for the soesjes is Profiterole. These are cream puffs that are dipped in chocolate!

Ingredients dough:

100 ml milk
100 ml water
100 gram butter
1/4 teaspoon salt ( if you use unsalted butter)
100 gram flour
2 (extra)large eggs

Ingredients filling:

500 ml cream
50 gram sugar
10 gram vanilla sugar
10 gram whipped cream stabilizer

Pre-heat oven at 200 degrees Celsius. Take a pan and add water, milk butter and salt. Turn on the cooker on medium heat and keep stirring till butter is melted.

Turn off the cooker and add flour. Mix it well and turn on cooker again and cook it till it isn't sticking to the pan anymore.

It really needs to look like dough and the bottom of the pan might be slightly burned but that's okay.

Take a bowl and put the dough inside the bowl. Add one egg and mix it evenly. When it is mixed well add the other egg and mix it evenly again.

Take the piping bag with a large piping tip and fill it with the dough. Remove any air bubbles and start making swirls on the parchment paper. Put the baking sheet inside the oven for 20-25 minutes till they are golden brown.

When the puffs are done you can put them on a roaster and leave them chill. Start making the whipped cream for the filling. make sure the whipped cream is stiff enough.

With a toothpick you can poke a hole at the bottom and inject the puffs with the whipped cream using a piping bag with a smaller tip.

The cream puffs are done but you can still decorate them with melted chocolate or just powdered sugar on top.

Excellent post, very well done. I lived in Amsterdam for 15 years and loved them from the local bakery. Amsterdam has some great bakeries. My mouth starting drooling when I spotted your post.

Thanks @robbieretard. Yes, they are delicious from the local bakery, but i always wanted to know how to make them myself. I have to say that when you make your own soesjes, they taste even better. :-)
