THE MOST FAMOUS SAUCE IN THE WORLD: Madame MAYONNAISE
[made up in less than 3 minutes]
INGREDIENTS
- Mixer with minimum 250 watts [any lower power will not be enough to go successfull]
- Non frozen eggs [someone don't put albums]
- Some drops of winegar [I use the apple one]
- Sunflower seeds oil
- Salt
TRICKS
the main one is [as said above] that the egg must be at enviromental temperature for some time before to start [i usually put out of fridge one egg the day before], second important thing is to add oil little by little unless you want to see some crazy liquid instead of your wonderful sauce.
METHOD
put in a 1/2 liter glass jar the salt, your egg, winegar and add some oil to double the total volume inside. now insert the mixer putting it touching the bottom of jar and start it. suddenly you will see the emulsion swell, then add very gently the oil. the more oil you add the more substantial your sauce will become.
