For Wii U, we got better results if the person hosting set a static IP on the console and forwarded port 55435 on their router. Find instructions for how to enable port forwarding on your router here: https://portforward.com/router.htm (ignore the ads). We also set Input Latency Frames to 3. Also, triple check that you're using the EXACT SAME core and game file. For arcade games, stick to FB Alpha 2012. MAME produced an infernal screeching for us.
