Today I share with you one of the new things that I grew this year that has earned a spot in my garden for years to come. This Chinese Multi-Colored Spinach was a delight to grow, it didn't bolt in the hot summer months, it was great cooked in dishes and also tasty as a fresh green when eating the younger leaves. We used it in our edible landscape as the colors were so vibrant and really stood out. If your looking for greens that can stand the heat I would recommend growing this!

I love Baker Creek seeds! I call their annual catalog my "seed porn" and spend months looking through it each year. Did you know that if you go to Jamaica, they serve a greens they call "callalloo" and it's actually amaranth? It's one of my favorite greens. I am not very interested in the seeds for eating but some folks love them and use them similar to millet or other tiny grains. Thanks for posting @thecitystead, keep up the good seed focus and you will eat for a lifetime!

Why is this post looking like a ghost town?! That's some great info there. I wasn't expecting to learn so much from it. We get really hot here, so I'm going to keep an eye out for this.

We LOVE Vegetable Amaranth (aka Chinese Spinach). It does wonderful for us here in NC through our hot summer as well. We harvest the leaves for smoothies, salads, etc. and we even harvest extra to dry and grind to a powder for smoothies. We also freeze some fresh for use in stir fry or soups over winter. :) It's an amazing plant!
