Hey Ya'll!
Today I made some pulled BBQ chicken and needed some coleslaw on top!
Shred or cut 1 whole cabbage and 1 carrot finely. (I added a sprig of parsley as well)
Dressing: 2 TBS cane sugar, 1/2 cup mayo, a TBS balsamic vinegar, pepper and salt, 2 tsp lemon juice, minced onion. Stir that all together and add to cabbage mix. Refrigerate for 2 hours or you can eat it right away. It is my fave coleslaw! Enjoy and thanks for watching!!!

Oh man, that looks so refreshing! You are not going to believe this, but my daughter's #1 allergen is CARROTS!! It's such a tragedy- no carrot in soups, no carrot cake, no cole slaw!! And since we avoid artificial colors, we also have to be super careful about what is used in natural food colors because both orange and purple carrots are often substituted for color!
Sigh....
Anyway, I still have carrots from time to time on the side and we're hoping our cabbages actually grow this year, so maybe I'll try this. I use my Vita Mix constantly but have been thinking that for kraut and such a food processor would be nice. Do you like yours enough to recommend it?

Looks like a great recipe and the food processor sure speeds up the whole thing. One of my buddies enjoys trying all different types of coleslaw and potato salad. It's like a quest for him haha. Nicely done.

I love making homemade coleslaw but I'm the only one who eats it - unless we have company over. I've never tried it with balsamic vinegar! I'll give it a go next time I make some. :)
