My dad was an avid cockfighter. He was a constant participant of derbies and would even buy DVDs of those that he missed. I couldn't avoid catching glimpses of the rounds because he would watch it in our living room. I remember the owners forcing the birds to literally fight each other to death. The winner would have its wounds seen to and the loser goes into a pot for a mean chicken stew. Is it a terrible, inhumane, and barbaric practice? Yes. Does it lead to a knockout dish that goes perfectly with grits? I am ashamed to say, yes.
