I really like to have an omelette and usually I put in some cheese and garlic and sometimes some chicken. I mix up three eggs really well in a bowl and add a touch of milk. Then I cut the cheese very fine and add that to the mix. The garlic has to be cut very fine and added. Then pour into a large pan with a spoonful of oil. The pan and oil has to be hot first. Then leave for a minute for it to cook then gently ease the extra around the edges. I like to whizz the omelette around in the pan as I am doing it then when it is ready I flip it over. It has to be brown and cooked right through. Then flip it onto a large plate and it is ready to eat.
