The famous sharkara varatti in production. Roughly we can translate sweet fried. This is made up of a type of raw banana, Nenthiran banana. I didn't get proper English name for this type of bananas.

The bananas dipped in turmeric water for time and cut in to thicker pieces. The pieces then fried in coconut oil.
A thick jaggery paste is created by melting, the fried banana pieces are added to the paste with dry ginger powder (or) cardamom powder and with little roasted rice flour.

Vigorous mixing is need for this jaggery coated banana chips or sharkara varatti to get its final shape and taste.

Kerala banana in Kerala, india.

We are doing banana chips using green raw plantain cutting into thin round shape then we deep fry for a minutes.
