We receive a dozen entry last contest number 2 of Steemph.antipolo featuring Antipolo foods and delicacy. Those entries made us feel so hungry and crave for the featured foods. This dish that we are going to share is one on the list. To consider that this is a legitimate Antipolo dish, we are so proud of it.
Adobong Bundok is another Adovo version. Being one of the hundred Adobo version in the Philippines, Adobong Bundok is unique. Instead of using regular meat, this dish deals with making internal chicken meats a palatable one.

Before the colonizers of Philippines invaded the country, Filipinos are already cooking Adobo. Adobo is a famous Filipino dish based on putting together soy sauce, vinegar and other spices. This can be titled as the National Dish since anywhere you go in the different islands of the country you will encounter another version of this. It is so flexible that you can use different meats and vegetables if you will engage in cooking Adobo.

Adobong Bundok came from the unique minds of Antipolenos. During the Spanish period when Filipinos serve chicken based dishes in gatherings, most of the time the internal organs are being neglected. Since we don't want to waste food, Filipinos during that time tried to cook the internal organs in Adobo Style. But this time, they put ginger or chili to make it even more delicious and to neutralize the pungent taste of internal meats.
Steemian @julie26's entry of this dish in the contest won the 4th place among the dozen of entry. Though scary in appearance, the taste of Adobong Bundok tells otherwise. It is really sumptuous. You will definitely ask for an extra rice.
Here in Steemph.antipolo, we are so happy that there is someone who discussed this signature Antipolo dish of which on the sad part vanishes gradually in the daily lives of Antipolenos due to the advent of ready to cook chicken meats, instant/ processed foods and food chains.
We should protect our heritage for it uproots our identity. It is excellent to improve as always but let's not forget where we came from. Adobong Bundok is not just a dish, it is part of history and identity of Antipolenos. Hoping that after this blog and related blogs more Antipolenos will revive the featured food.
