Have you heard og ginamos in the Philippines? Well I'm sure if someone will mention ginamos in the Philippines I know that every Filipino will describe it as "mouth watering" and 'yes it is.
Ginamos are small fermented fish seasoned with some salt and vineger and other basic recipes. The main purpose on why Filipinos turn this fishes into "ginamos" is to preserve it. Maybe they adopt this style from our ancestors.
The best 'lets say' partner for ginamos is banana which is not fully ripen. We cebuanos call that "saging nga palbangaan". You just have to dip the banana into the 'ginamos' "specially with those hot chili pepper" and you'll surely come back for more.
