Ingredients
1 lb large shrimp, peeled, deveined, patted dry
2 tbsp butter, unsalted
3 tsp fresh garlic, minced
3 tbsp dry white vermouth
2 tsp lemon zest
1 tbsp lemon juice
2 large zucchini
1 tbsp parsley, finely chopped
Directions
1. In a large skillet, melt butter over medium heat. Once foaming has stopped, add shrimp all at once.Let shrimp cook for 1 minute without touching them, then add garlic, flip, and cook for another 2 minutes.
2. Add in lemon juice and vermouth to hot skillet, scraping up any browned bit stuck to the bottom. Let cook until thickened, about 3 minutes. Add lemon zest and parsley and cook for 1 minute. Add zoodles and cook for 2 minutes or until the noodles are slightly tender and the shrimp is warmed.
3. For serving, add in a pinch of freshly cracked black pepper, grated parmesan and/or a lemon wedge.
