CURD RICE also called yogurt rice is an Indian dish. The word "curd" in Indian English refers to unsweetened pro-biotic yoghurt.
NOTE: Curd Rice is the only Indian food, capable of releasing a Chemical called Tryptophan into the Brain.
Study reveals that: Curd rice is the only food which can release Tryptophan in Brain, which calms you down and brings a cool thinking as your neurons are recharging under the soothing effect of Tryptophan.
Indians alone take Curd as Curd. But the Western world takes it as Yogurt, which got Sugar and sugar will not calm the Brain but increase the Glucose level and makes the body more restless. Sugar is an inhibitor for the Balance of Neural activity. It also triggers hyperactivity
Curd rice, was made fun of and ridiculed by many Brahmin hating fanatics as it is a symbol for South Indian brahmins, is also the scientific reason for their intellectual advancement as it is the Best brain food which activates the Brain in a balanced manner in a Tropical climate!
INGREDIENTS
- 2 cups cooked rice
- 1 cup curd / yogurt (fresh and thick)
- 1 tsp fresh cream (optional)
salt to taste - ¼ cup full cream milk
- Fried urad dal,
- Mustard seeds,
- Green chilli and
- Chopped cilantro
- Ginger
- Curry leaves.
- Cumming seed
PREPARATION
Rice is steamed so it breaks down into nearly a paste. It is then allowed to cool to room temperature, after which it is seasoned with finely chopped green chillies, ginger, and curry leaves, and sometimes along with the tadka of urad dal, mustard seeds, cumin seeds, and asafoetida. Finally, milk, yogurt, and salt are added.
NOTE: Not all the ingredients listed above will be used at once...
It can also be prepared alternatively by mashing cooked plain rice with some salt, yogurt and (a bit of milk to lessen the sour flavor of yogurt or to stop it from souring too much) garnishing it with fried urad dal, mustard seeds, green chilli and chopped cilantro.
Let me just digress into telling you the importance of this food recipe in the body.... I'll only list the importance, I wouldn't go soon deeply....
