#MyFoodAdventure 2 | "TAPEE BULEUKAT ADANG": The Unique Dessert from Aceh

"Tapee Buleukat Adang" is one of the favorite dessert or appetizers of the ancient Kings of Aceh, like Sultan Iskandar Muda, a distinguished King of Aceh Kingdom, a powerful ally of Turkey Ottoman, who continues his predecessors habit.


Hi Dear Steemians,

Today I want to introduce one more dessert from my country, Aceh, Indonesia. The unique and almost rare dessert is called "Tapee". It's made from sticky (glutinous black/white) rice or cassava, and can be served as appetizers or desserts at once. But this time I will discuss about "Tapee Buleukat Adang" (Tapee of Glutinous Black Rice), because that's what I found to be eaten right now and so far and the most favorite among all types of "tapee".

Intro

"Tapee Buleukat Adang" is one of the favorite dessert or appetizers of the ancient Kings of Aceh, like Sultan Iskandar Muda, a distinguished King of Aceh Kingdom, a powerful ally of Turkey Ottoman, who continues his predecessors habit. 

Except to self-consumption and for the royal family, it was also serve as one of special menu to welcome the dignitaries of friendly countries, as guests of the king.

Do not asked about the taste, certainly very typical and unique. The sweetness comes from sugar, meanwhile the sour taste (slightly) and warm on the tongue comes from yeast used as a fermentation blend.

My brothers, who are currently living in Europe, says they are greatly helped by this menu, especially when the winter comes, because it's good enough for warming their bodies and they are committed to continuing to maintain this recipe forever.[image]

Ingredients (recipe) and How to cook

"Making "Tape" isn't an easy job, but it must be with patience and obedience to the taboos,that has been outlined. If not, then your work will be in vain, because your "tapee" will not be edible (rotten), because this is a meal made through the fermentation process.

Therefore, not many can make this menu, moreover the women who live in modern times today. This recipe I dedicate to you (who are eager to try it) by asking to my mother, who is already more than 60 years old.

I hope this ancient rare food recipe can be preserved in this steemit as well, so it can be an inheritance for our generation, and won't be extincted by the time.[image]

Related to abstinence, you will find it in the final stages of its making process, as follows:

Ingredients :

  1. Sticky rice 1/2 kg ;
  2. Yeast, 2 pcs ;
  3. Fresh water, 2 glasses ;
  4. White sugar, 2 tablespoons ;
  5. Banana leaf, for wrapping sufficiently.

How to cook :

  • Black glutinous rice should be washed first until it is properly cleaned ;
  • Soak the black sticky rice for one night until soft, because this type of rice is harder than white rice ;
  • If soaking has finished, next day grab and drain the rice ;
  • While sticky rice steamed, prepare hot water as much as 2 glasses ;
  • While steaming (when the smoke pull-out), flush it over with the 2 cup of hot water (the steamer position is still above the stove), stirring until all the glutinous rice is exposed to the hot water evenly. Continue to steam until the sticky rice becomes cooked ;
  • If it is cooked, lift glutinous rice, put it into a tray or a large winnowing, then flattened. Let the sticky rice that has been flattened in the tray has been really cold. While waiting for the rice cold, mash the yeast.
  • Take a medium-sized container, give a neat banana leaf cover / cover the entire surface of the container. After the banana leaf base, enter the first layer of sticky rice, smooth it well, then sprinkle it with a mashed yeast until blended. Can also be added refined sugar / caster sufficiently (optional / not necessarily) ;
  • Add another second layer of glutinous rice, sprinkle yeast over it and refined sugar. Perform this process onwards until the third, fourth, or until the ingredient runs out ;
  • Add a banana leaf to cover the surface of your "tapee" will be well made and really tight (can use 2 layers of banana leaves or added with a clean napkin cloth). Close the back of the container with the lid until tightly, then just sit for 3 days and 2 nights. Put the "tapee" container in a warm place ;
  • If it's 3 days 2 nights, sticky tape can be opened. Although it is just a visit, never opened before maturity, because the fermentation process can be disrupted. If only smell it from the outside it's okay, and although not even 3 days, if the smell is strong, glutinous tape can be opened and served.

In addition to eliminate hunger because it is made from rice, it's also believed have various efficacy for body. There are at least 13 kinds efficacy of "Tapee Bulukat Adang", who have proven and trusted by our ancestors and also inherited until now to us :

  1. As antibody to protect our health from various disease attacks ;
  2. As a good source of the energy ;
  3. Prevent Risk of Diabetes ;
  4. Preventing Heart Disease ;
  5. Improving Liver Cell Damage ;
  6. Stabilizing Thyroid Hormone Activity ;

  8. Helps Maintain Bone Health ;
  9. Reducing the Risks of Anemia ;
  10. Nourish Digestive System ;
  11. Slowing the Aging Process ;
  12. Helps Reduce Blood Cholesterol ;
  13. Good Enough for Hair Enrichment.

Probably, caused by the various efficacy mentioned above --especially No. 4, from ancient times until now, Aceh people are known as a race who never afraid to the war ...LoL
