Cucumber Basil Soup (Raw, Vegan)

My friend and inspiration Jessica, has been helping me transition into this beautiful life of raw food. She has healed herself naturally with raw food and is now about to have her first baby girl at 40 years old :)
So when she sent me the recipe for this soup, I had to give it a try!

This was an extremely simple recipe, and even better, no cooking involved! I don't think I've ever had a raw soup before, so it is different than anything I've ever had..healthy and delicious!!

The recipe calls for two cucumbers (peeled and diced) and half of a seeded serrano pepper.

~Cucumbers have multiple B vitamins, help with hydration, help keep skin young, fights inflammation, reduces the risk of cancer and so much more!
~Serrano peppers help relieve arthritis, improve heart health and boost the immune system!

1/2 a cup of raw cashews (soaked for 2 hours if the blender being used is not high speed)
I used a vitamix and the cashews were blended right up without any soaking!

Cashews have vitamin E, K and B6, iron magnesium and much more!

The recipe called for 1 clove of garlic, so I used 2 ;) Never too much garlic for me!

Garlic has Vitamin B6 and C. It helps prevent colds and heart attacks. It's an anti-inflammatory and much more!

3-4 Tablespoons of lemon juice. I used a whole lemon and it was a great amount for my personal taste.

Lemons have Vitamin C. It help with nice skin, digestion, hydration and much more!

1 cup of fresh basil really makes this soup in my opinion.

Basil fights cancer, acts as an anti-inflammatory, fights depression and other diseases!

Add 1 cup of water
3/4 teaspoons of sea salt
Then blend all together until smooth and creamy!

Serve and top with fresh mint and olive oil (optional, I left it out as I'm avoiding oil).
Eat at room temperature or chilled and ENJOY!!
