Today I want to share with you the most amazing recipe ever! This is roast ajika spiced chicken. It is so good, juicy and full of flavour. I absolutely love it. This succulent roast chicken is a must holiday dish. Whether you’re hosting a small dinner party or cooking for the whole extended family, a roast chicken is one of the easiest dishes to make. That said, while many people learned to cook their chicken with onions and vegetables in a roasting pan, I like to surprise guests by adding something unique—and it always gets compliments.

Ajika is a well-known blend of chillies and fragrant herbs and spices with traditional varieties originating from regions of the South Caucasus such as Abkhazia, but until now, no authentic variety has been widely available in the UK. With its unique heritage, ultra-savoury flavour bursts, tantalising aroma and wide range of applications, these wonderful chilli and herb pastes bring something truly different to the world of spices.

I collaborated with Ajika and created this amazing chicken dish full of flavour and served it with colourful mediteranian vegetalbles. I also made my favourite cucumber and tomato salad topped with sour cream and ajika.

It is Lovingly made, based on a generation-old family recipe, using only the best quality natural ingredients, their products can be enjoyed as a meat or chicken rub, a marinade for fish, blended with natural yoghurt, hummus or soured cream, as a base ingredient for curries, soups and pasta sauces, or even as a salad dressing if loosened with oil or water. Ingredients :

1-2 kg of chicken ( you can use whole chicken, chicken thighs, drumsticks or wings)
1-2 tbsp of Ajika spice and herb paste ( Use mild or hot for better flavour)
Vegetables ( use any kind of vegetables you like)
Tomatoes
Cucumbers
Fresh Dill
Sour cream
1 tsp of green or red alike

Directions:

Step 1: In a large bowl, place your chicken and then add ajika spice. Rub the chicken nice and well around all sides with your hands, almost like massaging the chicken. You don’t need to add anymore spices here, that is the beauty of this ajika. I am using mediteranian vegetables as a base, place them onto a roasting tray with chicken.

Step 2 : Roast your chicken for 40-45 min at 180 C / 350 F. In the meantime make your salad. Chop tomatos, cucumbers and dill and add into a large bowl. Then add spicy or mild ajika into the sour cream and mix well. Then mix with the vegetables and salad is done.

Step 3 : Serve chicken with vegetables and salad and enjoy! Super easy, quick and delicious meal.
