PRYANIKI - RUSSIAN TEA COOKIES

Pryaniki are Russian Honey spiced cookies that are similar in texture to a honey jumble and are commonly made for festive occasions. These small biscuits are a moorish treat to accompany a warm cup of tea or coffee. 

Pryaniki go back for centuries in the traditional Russian kitchen. You will find them on the shelves of all Russian stores. 

The flavor is with coffee, honey and speckled through perfectly with spices – cinnamon, vanilla, nutmeg and allspice. This recipe makes around 40-50 cookies!


Ingredients

1/4 cup hot water
125 gr OR 1/2 cup butter
125 gr OR 1/2 cup sugar
125 gr OR 1/2 cups honey ( you can use any honey you like)
1 teaspoons vanilla extract
1 teaspoon allspice
1-2 tbsp instant coffee ( add more if you like coffee flavour) you can replace with cocoa powder
1 tsp cinnamon
1 tsp ginger
1/4 teaspoon grated nutmeg
1 egg
1/2 teaspoons baking soda dissolved in 1 teaspoon white vinegar
1/2 teaspoons baking powder
420 gr OR 3 1/2 cups plain flour


Glaze:
250 gr OR 2 cups icing sugar
1/4 cup milk

They are soft as well, but more juicier, with a different coating on top. They are quite tricky to make, after baking them, they must have the right consistency to absorb that honey and spices flavoured syrup. They are also called Greek Christmas honey cookies.

Is there a different name for these? Slang maybe? Im sure ive tasted it, just - name doesnt fit into what i remember :)

Initially they reminded me of Russian Tea Cakes but these are different. Life is busy for me now but great. I'm releasing two books this year. I am really hoping that we can make it to Lisbon!
