RUSSIAN APPLE PIE - SHARLOTKA RECIPE

Sharlotka (Шарлотка) is a Russian apple cake, it’s delicate and light. 

This apple sharlotka recipe is so quick and easy to make. 

The texture is perfect; soft and airy, and the sweet cake is balanced with the perfect amount of tartness from the apples. 

Russian cake and it’s so simple to make. Wonderful to have with your morning tea or as an afternoon snack.

Ingredients

4 - 6 eggs ( room temperature eggs) If you dont want it too eggy use 4 eggs.
200 gr OR 1 cup sugar
3 tbsp OR ¼ cup sour cream (optional)
1 teaspoon baking soda, dissolved in ½ teaspoon vinegar
200 gr OR 1 cup of flour
1 tsp of vanilla extract
4-5 green apples

Directions 

Step 1 : Preheat your oven to 180 C or 350 F.
Step 2 : Peel the apples and cut into small, thin pieces.
Step 3 : Whisk the eggs and sugar together until they are pale yellow and foamy.
Step 4 : Add the sour cream to the batter.
Step 5 : Dissolve the baking soda in vinegar and add to the batter also. Mix well to combine.
Step 6 : Add the flour to the batter and mix just until the flour is incorporated.
Step 7 : Grease a 10 inch round cake pan. Line the bottom of the pan with parchment paper. 
Step 8 : Add the apples to the prepared cake pan and pour the batter over the apples and distribute evenly over the top.
Step 9 : Bake in the oven for 45-50 minutes, until the sharlotka is golden, or when a toothpick comes out clean from the center of the cake.
Step 10: Run an offset spatula or butter knife around the edges of the cake pan and flip the cake over onto a cooling rack. The parchment paper will peel right off. Allow it to cool for about 15 minutes.
Step 11: Place the sharlotka onto a serving platter. Dust with icing sugar.

Yum – this looks/sounds delicious! I am definitely going to try this out in the next few days. We recently bought a big box of apples and its a good way to use them. I made the apple pie before, really yummy.

This apple pie is totally different from the American pie over here. Like this has a good presentation that could be eaten at a fancy dinner or like you said with your morning tea. I love the fact when it's finished baking you ad the icing sugar. This looks delightful and I'm guessing it taste better then it looks. Great post 🙏I want pie now.

Wow I had a slice of cherry pie in the morning and I was wondering if Alla has a new pie recipe....and now I see your sharlotka - brilliant! Definitely looks very yummy and I like how you used green or Granny Smith apples to make the pie - they are the most healthiest apples in fact!

I've worked in restaurant for so many years that I grew tired of them. The hard work and lack of appreciation kinda left a bitter Taste in my mouth towards cooking. Lack of funds and not so pleasant memories of restaurant work made it so I don't really enjoy restaurants as much as other people seem to.
I actually stopped cooking for fun. Not on purpose but just because of routine. Seems like I let life snuff my flame for it. But seeing your post lights a little spark in me. It's making me realize that I've associated good food with restaurants and forgotten that I was a trained cook. So obviously I could cook something cool for myself. I still cook for myself but not really for fun just to eat lol. Thanks for the reminder.

Oh Lord have mercy on my chubby minded little brain. I would really hurt myself if I got my hands on that apple pie, in a room where no one could judge me, and I would pretend the calories where not real and did not count. :D
