Super simple dinner recipe: Vegetable Asian Hash

It was 5pm yesterday night and I had three hungry children and a husband who were waiting for something brilliant to come from the kitchen. Now, I’m not opposed to the occasional pizza or other easy peasy solution, but I like to feed my family healthy food to nourish their bodies whenever and however I can.

So, I took a glance in my fridge and found quite the assortment of veggies...and a chunk of nitrate-free polish sausage. An idea formed in my head for dinner; something like a cross between a stir fry and a hash.

Here’s my very-flexible dinner solution, which I call:

Vegetable Asian hash

Chop and sauté in coconut oil:

¼ head cauliflower
3 stalks celery
3 cloves garlic
½ large onion
2 red potatoes
1 parsnip
1/2-1 lb. sausage or other meat (optional)

Add salt, pepper, and a generous dash of coconut aminos.
Add 1lb diced pre-cooked sausage or other meat (optional). Saute together.
Cover and let sit while you prepare the table for dining. Enjoy!

The verdict:

Everyone enjoyed the final result. I usually include ketchup at the table, since the kids and sometimes my husband use it on their entrees, but none needed here! It was delicious as is. We found the longer it sits at the end, the more caramelized and almost sweet the dinner tastes.

I'll definitely log this one away for future go-to dinner ideas.

That looks great. I love it when my wife does stuff like that. It's amazing how she can make anything turn into a gourmet meal. I'm sure your family would say the same about you.

I skipped down to look at the recipe, scanned it multiple times, found no meat, noticed the name of the post, and grimaced. No meat? CMON!

It does look tasty though. You could easily add some meat to it :)

Actually, I snuck in an optional meat topping in the paragraph following the ingredients, but you're right, I should give it more a place of prominance. It did make it pretty awesome.

asian hash rang quite a different bell ;)

I wasn't sure what to call it. "Hash" I believe is a mixture of diced potatoes with meat. And the vegetables with coconut aminos reminded me of something that might be Asian. I'm open to better recipe title suggestions however :)

I think it's a great title!

To the best of my knowledge hash, as in corned beef hash, can be made with diced or mashed potatoes. In fact I'm guessing the only requirement is that the spuds be cooked. I've not encountered a hash like yours, so I don't know what you should call it, other than delicious. The final shot certainly looks it.
