Salmon rice porridge recipe.

Ingredients.

  • 1 cup of glutinous rice.
  • 200 grams of salmon flesh.
  • 1 small carrot (pelled and finely chopped).
  • 100 grams of sweet corn kernel.
  • 1 shallot (finely chopped).
  • Green onion and dill (thinly sliced).
  • Black peper, salt, sugar, vegetable oil and fish sauce.

Instructions.

  • Remove a skin and bones of a salmon fillet and chopped. Mix chopped salmon with 1 teaspoon salt, 1 tablespoon sugar and 1/4 teaspoon black pepper for about 5 minutes.
  • Heat oil in a pan over medium heat. Add salmon and stir well for about 5 minutes. Remove and set aside.
  • Heat vegetable oil in the pan which you were cooking salmon. Add carrot, sweet corn and stir well for about 5 minutes.
  • In the deep pot, add 6 cups of cool water, rice and 1 teaspoon salt. Bring to a boil and simmer till the rice is broken, looks like porridge. Then add cooked carrot and cooked sweet corn.
  • Season the pot with salt, fish sauce and sugar. Ladle into a bowl, serve with dill and green onion.
