Steamed baby squid with piper lolot leaves recipe.

Ingredients.

  • 500 grams squid.
  • 4 lemongrass (cut into pieces).
  • 1 ginger (cut into julienne).
  • 10 piper lolot leaves (very thinly sliced).
  • 1 tablespoon sugar.

Dipping sauce:

  • Fish sauce, sugar, fresh lime juice, ginger (finely chopped) and chilli.

Instructions.

  • Wash the squid well after removing inedible portions.
  • Prepare with cool water and heat over high heat.
  • When the water is boilling, steam the squid with lemongrass and ginger for about 5 minutes.
  • While squid is steaming, combine the sugar, ginger, fish sauce, fresh lime juice and chilli in a bowl, mix and stir well, you have a dipping sauce.
  • After 5 minutes, remove squid and arrange these on a plate, final step is add piper lolot leaves on the top.
  • Serve warm with dipping sauce.
