PASSION FRUITS CUPCAKES

INGREDIENTS

(12-14 cupcakes)

• 175 grms Butter (3/4 cup)
• 175 grms Sugar (3/4 cup)
• 1 tsp Vanilla
• 3 Eggs
• 4 tbsp Liquid Milk
• 4 tbsp Passion Fruit Juice
• 175 grms All flour use (1 1/2 cups plus 1 tbsp)
• 2 tsp Baking Powder

Instructions

  1. In a bowl, add butter, sugar and vanilla, and beat until creamy (for 5 minutes)
  2. Add the eggs one at a time and beat until incorporated.
  3. Add passion fruit juice.
  4. Add flour and baking powder, previously sifted, in two parts, interspersed with milk.
  5. Bake for 15 minutes at 170°C or until a stick inserted comes out clean.
  6. Decorate.

PASSION FRUIT CREAM
• 3 Eggs
• 165 grms Sugar (3/4 cup)
• 120 ml Passion fruit juice (1/2 cup)
• 250 grms Unsalted butter (1 cup + 1 tbsp)

Instructions

  1. In a bowl, add eggs, juice passion fruit, and sugar.
  2. Mix briefly.
  3. Add water in a pot, and heat over medium heat (bain-marie).
  4. Place the bowl on top of the pot, and stir all the time with a whisk (approximately 20 minutes).
  5. Get off the heat, and let cool for 12 minutes.
  6. Add butter little by little, without stopping beating.
  7. Cover with plastic wrap.
  8. Refrigerate for at least 2 hours and use. 9. With a nozzle, make holes in the cupcakes and fill with this cream.

PASSION FRUIT (Parchita) BUTTER CREAM
Ingredients
• 115 grams Unsalted Butter (1/2 cup)
• 220 grams Icing Sugar (2 cups)
• 2 or 3 tbsp Passion Fruit (Parchita) (add more if necessary)

Instructions

  1. Start beating the butter for 5 minutes.
  2. Incorporate sugar. Beat for 5 minutes.
  3. Add the passion fruit juice and beat for 2 more minutes and it is ready to use.
  4. Decorate the cupcakes with the Wilton 1M tip.
