PASSION FRUITS CUPCAKES
INGREDIENTS
(12-14 cupcakes)
• 175 grms Butter (3/4 cup)
• 175 grms Sugar (3/4 cup)
• 1 tsp Vanilla
• 3 Eggs
• 4 tbsp Liquid Milk
• 4 tbsp Passion Fruit Juice
• 175 grms All flour use (1 1/2 cups plus 1 tbsp)
• 2 tsp Baking Powder
Instructions
- In a bowl, add butter, sugar and vanilla, and beat until creamy (for 5 minutes)
- Add the eggs one at a time and beat until incorporated.
- Add passion fruit juice.
- Add flour and baking powder, previously sifted, in two parts, interspersed with milk.
- Bake for 15 minutes at 170°C or until a stick inserted comes out clean.
- Decorate.
PASSION FRUIT CREAM
• 3 Eggs
• 165 grms Sugar (3/4 cup)
• 120 ml Passion fruit juice (1/2 cup)
• 250 grms Unsalted butter (1 cup + 1 tbsp)
Instructions
- In a bowl, add eggs, juice passion fruit, and sugar.
- Mix briefly.
- Add water in a pot, and heat over medium heat (bain-marie).
- Place the bowl on top of the pot, and stir all the time with a whisk (approximately 20 minutes).
- Get off the heat, and let cool for 12 minutes.
- Add butter little by little, without stopping beating.
- Cover with plastic wrap.
- Refrigerate for at least 2 hours and use. 9. With a nozzle, make holes in the cupcakes and fill with this cream.
PASSION FRUIT (Parchita) BUTTER CREAM
Ingredients
• 115 grams Unsalted Butter (1/2 cup)
• 220 grams Icing Sugar (2 cups)
• 2 or 3 tbsp Passion Fruit (Parchita) (add more if necessary)
Instructions
- Start beating the butter for 5 minutes.
- Incorporate sugar. Beat for 5 minutes.
- Add the passion fruit juice and beat for 2 more minutes and it is ready to use.
- Decorate the cupcakes with the Wilton 1M tip.
