Today am here to share a yummy and healthy snack recipe with you all..... I hope you guys enjoy it....
lets come to the dish KHANDAVI

KHANDAVI- is a savory snack in Gujarati cuisine. It consists of yellowish, tightly rolled bite-sized pieces, and is primarily made of gram flour and yogurt.

Preparation-

Khandvi is usually prepared from a batter of gram flour and yogurt seasoned with ginger paste, salt, water, turmeric, and sometimes green chili peppers. The batter is cooked down to a thick paste and then spread thinly on a flat surface.The khandvis are then rolled up tightly into 2–3 cm (1 inch) pieces.Khandvi is generally bite-size. It can also be seasoned with spices and condiments, such as grated cheese, chutney, or ketchup. It can be served hot or cold.

Ingridents-

1 cup curd
3/4 cup water
1/2 cup gram flour
3/4 teaspoon turmeric powder
pinch of asafoetida
1 teaspoon chilli ginger paste
salt to taste

For Tempering-
1 tablespoon oil
1teaspoon mustard seeds
2 green chillies(chopped)
6-8 curry leaves

For Garnishing-
chopped coriander leaves
freshly grated coconut

Method-
. beat curd,water and gram flour into a smooth batter.

.put this mixture in a bowl and heat for 4-5 min.

.mix salt,turmeric powder,asafoetida,chilli ginger pasteand heat for 4-5 min or till it thickens.

.when this mixture thickens spread it as a thin film on a polythin sheet or on a greesed plate with the help of a flat bottom bowl. allow to cool and cut out 1'*6' broad stripes.roll the stripe and arrange on the serving dish.

FOR Tempering-
.put oil in a pan and heat for 30 sec.add mustard seeds, green chilies, curry leaves and heat for 2-3 min.

.sprinkle on khandavi and garnish with coriender leaves and grated coconut. serve with ketchup....!!!!!!!
