Italian Cream Cheese Chicken and Rice Recipe - Thumbs Up Thursday by A Panama Mama

About a month ago, I gave the recipe I found for cream of chicken soup and mentioned that I was using it in my yummy Italian cream cheese chicken recipe. @enchantedspirit said she would love the recipe, so here you go! It is really easy, tasty and one of our favorites! I make it for pretty much every meal that we have to bring something to share with others.

I got this recipe from my mom (who apparently got it from this site), but I change it up a little bit. The original recipe calls for it being cooked in a crock pot, but I have cooked this on my stove and had it taste just as good in much less time. The other day I even made it with a rotisserie chicken and it tasted great. I usually serve it over rice and sometimes mix it all together in the crock pot.

Crockpot Italian Chicken

4 chicken breasts
1 packet dry Zesty Italian dressing (Regular works too.)
1 (8 oz) package cream cheese
1 can cream of chicken soup

Place the chicken in a crockpot and sprinkle Italian dressing packet over it. Pour in cream cheese and cream of chicken soup. Cook on low for at least 4 hours. If you feel the sauce is too thick you can thin it to your preferred consistency with a little milk. Serve over pasta or rice.

If you cook it on the stove instead of in a crockpot, boil the chicken before hand so it's cooked, or use a rotisserie chicken. You can use fresh or frozen chicken breasts to do this recipe.

I wondered where this had gotten to, but frankly, I've been far too busy to ask!! (And I don't even have five kids as an excuse. Just a terribly overcrowded life!) Thank you for remembering it. We're always looking for yummy recipes that are both fast and easy. I love to cook really nice, fancy things when I have the time, but sometimes -- like lately -- we need something fast, easy and good. We definitely will put this one the menu to try!!

Yea! I hope that you will enjoy it! We like it as it's super easy. I really don't like it when I spend an hour in the kitchen (or more) and we devour it in 15 minutes or less at the table. And then there are all the dishes to wash and put up. :) Man, if it weren't so expensive to eat out, we'd eat out a lot more often. Ha! Thanks for the comment!

It's missing veggies :)

That picture kind of looks like rice? Did the chicken soften and turn out into strands? Looks and reads delicious!

It is mixed with rice. You can also mix it with pasta, but we mix it with rice and it's yummy. We do veggies on the side almost every meal. You could probably mix in some broccoli or carrots and it would taste pretty good too. :)

This looks pretty good @apanamamama ! But is there an alternate to avoid the milk part? My dad's digestive system is a tad sensitive to dairy products at the moment, and it would be really good if this could work in a slightly different way as well.

Hm...I'm not sure as the cream cheese is what makes it really creamy. I guess you could just try it with multiple cans of cream of chicken soup or look for an alternative. It's yummy, so hopefully you get to try it and like it with a substitute. :)
