Pumpkin is not very common here in Panama, but I have a recipe I like to make with it called Pumpkin Chocolate Chip Squares. My friend recently gave me a pumpkin and told me it was ripe. I accidentally left it on my counter for an extra week and thankfully it looked great when I cut into it today. So I decided to make some pumpkin puree to use for my recipe and to freeze for later - it is so good for you, I will sneak it in other recipes. This way, I know the pumpkin is fresh and hasn't been sitting in a can for months and it has nothing in it but pumpkin!
The first thing I did was cut the pumpkin in half and take out the strands and seeds. Maybe I will toast some of them. I plan to plant quite a few and see if I can get some vines to grow!
Then you cut up the halves and stick them in the crock pot. No need to add any water! I cooked mine on high.
Let them cook for a while and you will notice the condensation on the top of the lid.
Then you know they are ready when you can stick a fork in them easily. Mine was done in about three hours.
Then take them out and scoop them out with a spoon.
It is already super soft and probably does not need to be blended up any more, but if you want to, you can stick it in the food processor. Mine still had a lot of water, so I put it in a colander on top of the bowl to let the water drain out and I'm left with this yummy stuff!

Yum. I made pumpkin cheesecake today. But I used canned purée. I did grind my own spices. :)

Here in Serbia pumpkin is not that popular but we do have some in our garden. I'm not a big fan of pumpkin but my family likes to put it in the over to bake, I guess, and then they eat it like that or my mom makes a pumpkin pie. We also toast the seeds.
Next time we find a pumpkin, I might try making this puree and include it in a recipe!

Yes, we don't eat it plain but put it in recipes and it makes for some yummy stuff. I just included the recipe I mentioned above for chocolate chip pumpkin squares. They really are yummy and relatively healthy! I need to find some other pumpkin recipes to try as well. Thanks for stopping by!
