I HAD TO DO SOME TESTING FOR THE FAMILYDINER so I made this French flaugnarde with pears. A flaugnarde is also known as a clafoutis but a classic clafoutis specifically have cherry fillings( with pits and all!) It perches somewhere between a custard and a baked pancake.
I first cooked the pears in port wine with vanilla bean, lemon zest and cinnamon. Then arranged the fruit into the batter and baked it untill the top was puffed and golden. Perfect!
Low in sugar (or no sugar at all!)!
