You've probably already found a recipe, but my all time favorite (though scaled down to keep costs lower) is Tyler Florence's Danish Ham. It uses juniper berries and beer in addition to honey, which helps cut both the salt and sweetness. I've even tested it on my grandmother, who is an extremely picky eater. i won't flag you as I am sure there are others who will. I also had a look at your blog and see that both of your posts are copied from the health website you link as your own content or blog.
