BEEF TARTARE AND SALAD

A great classic of bistro cuisine but accompanied by a salad of cherry tomatoes and avocado; it's lighter than French fries.

INGREDIENTS FOR 4 PEOPLE :

400 g minced meat
1 lawyer
0,25 basil bunch
0,25 bunch flat-leaf parsley
400 g cherry tomato
15 g capers
20 ml worcestershire sauce
4 eggs
16 g pickle
20 ml olive oil
20 g ketchup
8 g mustard
pepper
salt

THE RECIPE

Place the minced meat in a bowl.
Cut the pickles into strips and chop the parsley.
Put them in the bowl with the meat.
Add whole capers, ketchup, mustard and Worcestershire sauce.
Season with salt and pepper and mix with a fork.
Cover and put to rest in the refrigerator.
Meanwhile, in another bowl:
Place the cherry tomatoes cut in half and the avocado cut into strips.
Drizzle with olive oil,
Season with salt and pepper.
Add a few basil leaves and mix.
Take out the meat bowl, form the tartar on the plate with a large spoon.
Then place an egg yolk in the middle and serve with the tomato avocado salad.
