LEMON POUND CAKE

INGREDIENTS

1 cup unsalted margarine, melted
1 cup sugar
4 eggs
1 tablespoon lemon zest
2 mL salt
2 cups all-purpose flour

PREPARATION

STEP 1

Preheat oven to 180°C (350°F). Grease and flour a 23 x 13-cm (9 x 5-inch) loaf pan; set aside.

STEP 2

Beat salted margarine sticks and sugar in large bowl with electric mixer at high speed until light and fluffy, about 2 minutes.

STEP 3

Add eggs, one at a time, beating well after each egg. Beat in lemon zest and salt. Gradually beat in flour at low speed until smooth.

STEP 4

Spoon evenly into prepared pan. Bake for 1 hour. Cover with aluminum foil and cook 5 minutes longer or until a toothpick inserted in the center comes out clean. Cool 15 minutes on wire rack; remove from pan and cool completely. Drizzle, if desired, with lemon frosting.
