Strawberry Jam Squares

INGREDIENTS

2 1/2 cups flour
1 pinch salt
1 cup softened butter
2/3 cups sugar
1/4 cup slivered almonds
1 1/2 cups strawberry jam

PREPARATION

  1. In a bowl, combine flour and salt. Reserve. In a large bowl, using an electric mixer, beat butter with sugar until light and fluffy. Beating at low speed, stir in reserved dry ingredients in half until mixture has the texture of coarse bread crumbs. Line a 13" x 9" (33cm x 23cm) baking pan with parchment paper, letting it hang over the sides, then press two-thirds of the mixture into the bottom of the pan. Bake in preheated 350°F (180°C) oven for 10 minutes or until golden brown on sides. Let cool slightly.

  2. In another bowl, mix the remaining lumpy mixture with the almonds. Spread strawberry jam evenly over cooled crust and sprinkle with almond mixture, pressing gently to adhere. Bake in preheated 350°F (180°C) oven for 40 minutes or until golden brown. Place pan on rack and cool completely. Unmould by lifting parchment paper and cut into squares.

The squares will keep up to 3 days in the refrigerator.
