My wife asked me to cook up some plantain we had in the refridgerator for the kids while she was at work today. This is something she (a Nicaraguan girl) has prepared for the family on many occasions. However, it was really the first time I prepared them from beginning to end. It is not hard, you just slice them and fry them.
This has definitely been an acquired taste for me. The first few times I tried them in Nicaragua, I ate them out of necessity. Now, I really enjoy them, especially if properly accompanied.
They go well with a variety of simple traditional foods like homemade refried small red beans and sour cream.
In my opinion the more ripe they are the better they taste- i.e., the blacker the peel the better.
I decided I would add another of my favorite central-american treats to the plate as well- fried cotija cheese.
So healthy! ;)

theyre so hard to find where i live, ive looked for a while, and when i DO find them, theyre always dark green, and take WEEKS to turn yellow
