Foolproof crackling

If I was a super hero my kryptonite would be pork crackling. It doesn't even matter how that pork is cooked: 'kawali' (deep fried in a pan), on a spit, oven roasted, whatever ~ as long as that skin is crunchy I'm all over it.

As it happens, I've had a serious craving for Filipino food lately and although I make Chicken Adobo on the regular it's just not the same as pork with crackling ~ it's all about the crackling!

I have tried to make it a few times in the oven. I scored the skin, lathered it with salt, and bleh. I'd have some bits that cracked, some that didn't, the meat was often tough and I was never happy with what I ended up with so I figured Id just go old school and buy it from someone who knows what they're doing.

Until yesterday .....

Guess what I figured out!?
If you chuck the pork in the slow cooker for a few hours (mine were on high for at least 6 hours) , then in the oven for an hour you get perfect pork & crackling.

I took it out when it looked like this.

Grinded salt on the skin. Grind not rub because after 6 hours in the slow cooker everything is ready to fall off, so you touch something and it breaks off straight away.

Pre heat the oven as high as it'll get, chuck the pork in, reduce heat down to 180c and keep an eyeball on it.

About an hour later...

Taaa daaaa!!!

It was so easy I decided to cook the pork belly too! So we have pork leg and pork belly 🤤🤤

I reckon we'll be going with this for a couple of days.

I'm so happy you guys. I've had such a crappy relationship with food lately it's so good to find something I really want to eat that's so easy to make.

It's basically just moving the pork from the slow cooker to the oven. Ingredients is whatever pork cut you want (it worked well with leg and belly), water and salt. That's it!

Go get that slab of pork today and give this method a whirl. Not only do you get perfect crackling, you also get soft, fall apart meat.

My mom paid hella money when I was younger; new orthodontist, but he tightened my braces too fast, cracked my roots... fast forward...

  • cracked roots = no teeth

Yeah.. Make it tender with slow cooker/traditional boiling. For me I add garlic and onion for more flavor too. Some refrigerate the meat before deep frying so you get more crispy crackling sss! 😍😍😍
