History
Is a regional specific name for a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila
Jose Antonio de Cuervo y Valdes obtained land from the King of Spain in 1758 and began producing tequila – all before Mexico became an independent republic.
Jose Cuervo has been making tequila for over 250 years with the same experience, handcraftsmanship, and recipes that have been handed down generation through generation.

PIÑA
PIÑA is agave heart. Only the agave heart is used to make tequila. Which can weigh anywhere from 80 to 200 pounds when harvested. This heart is stripped of its leaves and then cooked to remove the sap.
Tequila Is Technically A Mezcal. Mezcal is a liquor made from the maguey plant, a form of agave. Mezcal can be made using a variety of agave plants, but tequila must be made using only blue agave.
How to Drink
First Way is neat.
Choose a tequila that is made from 100% agave. Not all tequilas are created equal. If you are planning on sipping your tequila and enjoying it like most Mexicans do, be sure to choose tequila that is 100% authentic.
There are tequilas that are "mixed," meaning that they are made with at least 51% agave and fortified with sugars. Stay away from these. They don't taste much like tequila.
Second Way Limo&Salt
Most famous way to drink tequila is shots with limo and salt
The salt-and-lime method of shooting tequila has been around for a while, though it's not clear that it's a popular way of shooting tequila in Mexico.
One report suggests that the oldest known mention of the salt-and-lime technique, from 1924, reverses the order: First lime, then tequila, then salt.
