Last night I decided to make homemade kangaroo spring rolls. I used a spring roll mixture which I already had in the freezer, so it became a simple matter of rolling them, cooking them, and sitting down to enjoy!
For those of you who aren't lucky enough to have eaten it, kangaroo is a wonderfully flavorsome meat which is low in fat and extremely good for you. It has a rich, gamey flavor, and is great marinated or used in most types of cooking. The only downside is that it can be a little chewy - hence the mince!
Creating The Rolls:
Unfortunately, rolling spring rolls is time consuming and boring, which is probably the only reason why I don't eat them a lot more often. As noted above, I used a simple meat and vegetable mixture which I already had in the freezer.
Ingredients:
- Kangaroo mince
- Copious anounts of garlic
- Fried onion
- Grated carrot
- Sesame oil
- Plenty of salt and pepper
- Any of your other favorite herbs and spices
- Whatever other vegetables you have in the fridge!
Combine all ingredients in a frying pan - fry things like onion and garlic before adding everything else - and cook until everything is soft and flavorsome. You can then use the mixture straight away, put it in the fridge, or freeze it to use later.
I use simple spring roll wrappers, available from most supermarkets. Put a small spoonfull of mixture in one corner of the wrapper, roll it up a little way, fold the two 'side' corners in, and finish rolling. Moisten the last centimeter or so of the wrapper so that it sticks to the completed roll and doesn't fall apart.
I only had enough wrappers left to roll about 20 of these little gems, but that was more than enough for two of us.
Cooking Your Spring Rolls
Cooking spring rolls is very simple. My favorite method is to deep fry them in oil at 190 degrees C. You can also bake them for a healthier option, or shallow fry them if you don't have a deep fryer. Ideally, the filling should already be cooked, so that all you need to do is heat everything up and make the outside crunchy.
Serve and Enjoy!
Once you have cooked your spring rolls, all that is left is to serve them and sit back and relax while you feast. I served mine with a simple salad and a mustard dipping sauce. The dipping sauce contained mayonaise, lemon juice, and mustard. Sweet chilli sauce also goes well with spring rolls.
