Hello!
Today we will cook a Chinese streetfood, which combines nutrition, cooking speed and an interesting flavors and aromas.

Number of servings: 2-3
Ingredients:
- Rice noodles, 200 gr.
- Sauce (see below), 100 ml
- Mussels, 200 gr.
- Red onion, 1 PC.
- Salted peanuts
- Egg, 1 PC.
- Garlic, 3 cloves
- Cilantro
- Green onions
- Vegetable oil, salt
As a sauce, you can use any available salty-sour combination: soy sauce with Apple cider vinegar, oyster sauce with lemon juice, fish sauce with rice vinegar, etc.
We have a mix of soy and fish sauce with lime juice, paprika and tamarind paste.
Red onions are cleaned and cut into cubes, green onion cut into pieces, garlic and cilantro chop finely.
Boil the noodles in boiling water for 7 minutes and rinse with cold water.
In a frying pan or wok with a small amount of vegetable oil, fry the peanuts for half a minute on high heat and set aside.
Add a little oil to the pan and fry the onion and garlic for 30 seconds.
Add the mussels and fry on high heat for one minute.
Аdd the noodles to center of pan. Add the sauce, stir and continue to fry for another minute.
Shift everything to the side, break the egg into the free space and fry for thirty seconds, stirring.
Mix the omelet with the rest of the contents and remove from the heat.
Serve with cilantro, green onions and roasted peanuts.
