I set the table with my mom's Kkakdugi (Cubed Radish Kimchi) and my Gyeran-mari (Korean Style Egg Roll). 


I usually made egg rolls with less salt because kimchi is salty. Recently, it changed because my mom's foods taste little flat. I use little more salt when cooking even though I have kimchi.

My mom's palate seemed to have dulled with age. Whenever she sends me kimchi, she asks me about the taste of her kimchi. I always say that it's delicious. I still love her kimchi even if the taste is not that I remember.

I didn't have enough side dishes. Two people will have together. I needed something more. There were only some eggs. I beat three eggs and put some milk and salt. Pour some into a hot pan. I cooked over low heat. When it was half-cooked, I turned it over and rolled it up slowly.

I put on the table my mom's kkakdugi-kimchi and the hot egg roll that I just cooked. It was too casual meal, but the simple egg roll seemed to save my lunch.

As long as your mom keeps cooking and being busy doing things she likes, she will be happy and young at heart! Sometimes our senses, including taste change a bit. To me, as I age, I try to keep active despite my age. A stress free life and happiness with love will always help one keep healthy and sharp minded. Your mother is very lucky to have such a caring and wonderful daughter! ;)

I love kimchi! It is probably the Korean food I have eaten the most. I just love it! But it can taste so differently depending on how it is prepared.

I haven't yet had the opportunity to try Korean cuisine but I'm sure I would love it! I've been told that it can be a bit spicy which would be fine by me!
