New England Crockpot Recipes: Maple Pork Roast
Here's another super simple crockpot recipe for anyone who loves maple syrup and pork. I'm using a three pound pork butt, a very inexpensive cut, for this one.
Place the pork butt fat side up in your crockpot and add a cup of chicken stock.
Then, cover the roast with approximately three-quarters of a cup of maple syrup! I'm using the inexpensive, commercially made maple syrup since I had it on hand, but the taste is much improved if you use real Vermont Maple Syrup.
Cover and cook on Low for ten (10) hours.
When finished, the roast has an amber color that looks smooth and inviting!
When you begin to ladle out the pork, it falls to pieces in a moist, pulled-pork style. It is incredibly tender and sweet!
I served the pork with a simple baked yellow potato and a side of California Mix vegetables (broccoli, cauliflower, and carrots.)
Low calorie and full of protein, this meal cost less than $3 to prepare and serve! That's thrifty New England value, my friends. And, there's just ONE dish to clean following the cooking time: your crockpot!

That is one simple recipe. If only my wife ate pork. I love the glazed look of the pork after you covered it in maple syrup.
I actually only rediscovered maple syrup recently. We were making pancakes but wanted something different to put on them. We found the good stuff too. It’s so damn good on pancakes.
