Vegan Lentil Soup With Blue Corn Dumplings....My Own Twist On Mexican Lentil Soup

Lentil soup is something eaten by every culture.

I have had it Lebanese style, I have had it in Egypt, I have had it in Indian restaurants and I have had it made by Germans.

I am here in Mexico but I have not had lentil soup here except for my own. I Mexicanized it the best that I could with ingredients that I had. I was too lazy to go to the market.

I made a simple but delicious soup from lentils carrots, celery, onion, garlic and vegetable soup base.

I had some blue corn flour specially made for making tortillas. I have purchased this in Canada but have never seen the blue one.

I made dumplings by mixing this flour with water and salt into a soft doughy consistency. I then rolled them into balls and added to the soup to cook for five to ten minutes.

I served it topped with Mexican hot sauce.
