Tomato soup "Caprese"
The scheme of preparation of this soup is not standard, and the ingredients correspond to "caprese" - a dish from Italy.
Ingredients (for 4 servings):
3 tbsp. olive oil
1 crushed bulb
900 g very ripe tomatoes, cut into halves
Salt and ground black pepper to taste
2 thinly sliced cloves of garlic
2 slices of bread
3 tbsp. grated Parmesan cheese
1 tbsp. vegetable broth
1 tbsp. burrata cheese
2 tbsp. Balsamic vinegar
1 / 4st. basil leaves
Preparation:
Preheat oven to 200C. Add onions and olive oil to the bottom of the mold. Spread the evenly chopped tomatoes over the onion. Season with salt and pepper to taste.
Place in the oven, bake for 20 minutes. Add the garlic evenly over the tomato. Return it to the oven for another 10 minutes. Remove, let cool for 10-15 minutes.
Mix the baked tomatoes, bread, parmesan cheese and vegetable broth in a blender, whisk until smooth. Serve the dish with sprinkled burrata cheese, balsamic vinegar and basil leaves.
