Hi wonderful steemsters, it is a pleasure sharing with you some of the foods we have here in Nigeria.
What we have here is called abacha-ncha made from cassava.
Guildline for preparation.
STEP1.
Harvest some tubers of cassava and peel off the back properly. Boil for 10-15 minuites and slice with a hand-grater. Wash thoroughly and allow to dry very well.
STEP2.
Soak the dried cassava in warm water and allow to soften. To a little palm oil, add pepper, a drop of local potash for colouring and stir well.
Note: no salt yet(to mentain the colour).
STEP3.
To the stired palm oil sauce, filter the soaked cassava and pour. Stir properly till colour turns orange. Now add a little salt and sliced garden egg leaves and stir very well. Poeple's choices on adding crayfish differ. But a smoked fish is the best.
STEP5:
Serve properly and enjoy...
