How to prepare Tuwo Shinkafa (Rice fufu)

One of the wonderful things about food is the fact that although we have different delicacies from different tribes, everybody irrespective of their tribe can make and eat them.

In line with that, Tuwo Shinkafa also known as Rice fufu is a type of Nigerian dish from the Northern part of Nigeria made from the thick pudding prepared from rice flour (the soft rice variety that after being cooked becomes sticky)

It should be noted that it is usually served with Northern soups such as Miyan Tuashe and Miyan Kuka, and apart from that, it also goes well with other Nigerian soups such as Gbegiri, Egusi and Okra soup.

The ingredients to use are just two!
-Rice (short/medium soft rice)
-Enough water.

Directions:
Rinse the quantity of rice you want to use and put it in a pot (a sizable one) and then pour in enough water to cover the rice and cook it at medium heat.

After the first doze of water dries, mash the rice between your fingers (This is to check the rice to see if the grains are already soft. Note that if they have a tiny resistance when you press them, it shows that you need to cook it some more).

So add a little more water if it is not yet soft, reduce the heat to low and cook till the water dries up, then repeat the process till it gets so soft to the extent that when you press it, it would melt.

Once this is done, move the rice in small quantities from the far end of the pot to the side and mash it with a wooden spatula.

When you are done, cover and leave it to steam for 2-3 minutes after which you should mix thoroughly, then to prevent the tuwo from drying up, dish serving quantities into a plastic film and wrap them up.

Then as the situation arises, you can serve them into smaller balls with any soup you like. (I prefer it with Egusi soup)

Tada! Then you can start eating.

Simple right? Just try it. At first, I was doubtful because it was not easy visualizing mashed rice in form of the swallows, but then, it worked out fine.
