Delicious Sweet Potato Pancakes.

My husband suffers from a rare bone disease, called Trevor disease. It is a rare disease that effects the right side of the body in the shoulder, hip, knee and/or the ankle. My husband has it in three of the four places that is known to effect the body. It has caused the bones where his hip socket should be, to close and push his femur out of the socket. He had a hip replacement In July of 2013 and the extensive surgery caused him to be on extended bed rest. The recovery was long, but he's been able to get back to work and he's more active then he's ever been. He is now trying to lose the extra weight from being so inactive for so long. We all have changed our eating habits and I started experimenting with recipes.

Here's my recipe for sweet potato pancakes and here is what you'll need:

2 Large sweet potatoes

2 eggs

1/2 cup of oats (Steal cut or old fashioned) If you use the old fashioned you will not need to cook them.

1/8 cup of unsweetened cashew milk (Or any milk of your choosing)

1 tsp of vanilla extract

Optional -1 teaspoon of Cinnamon and nutmeg (or as much as you want)

4 1/2 TBS of Coconut oil

1 fresh plum

This serves between 2-4

Boil 2 large sweet potatoes until they are soft enough to mash.

In a bowl mix 2 eggs, vanilla extract, cashew milk and seasonings if you choose to use cinnamon and nutmeg then mix in the oats.

Then add the mixture to the mashed sweet potatoes.

Heat a pan on medium heat and instead of butter use 2 TBS of coconut oil to the pan.

Using a large Spoon, scoop the batter into the pan.

Cook the pancakes 3-5 minutes on each side. Try using 2 spatulas when you flip the pancakes, because they can fall apart easily.

Core a plum and warm them in a pan with another 2 and a half TBS of coconut oil. If you want you can season them with cinnamon and nutmeg as well.

When they are soft top the pancakes with them. Also drizzle the coconut oil the plums were in over the top of the pancakes instead of syrup.

The coconut oil is increasing with a lot the bad cholesterol and it has bad effects for intestines too (destroying all bacterium you may have diarrhea for example) don't abuse of it as you are doing here. Go have a walk and eat more salad and cook without so much oil...

Coconut oil is actually extremely healthy for you. Just make sure is organic and cold pressed with minimal processing. I eat coconut oil daily.

Thanks for that. I'm doing some more research on it. I see mixed views. Of course there are mixed veiws on a lot of things.

No worries and please consult a nutritionist dr to make a healthy diet. Nobody wants to lose weight and get health problems. I have seen lot of people getting really fat after weird diets or with the kidneys, stomach or liver serious damaged. Out there are diets that apparently works, you lose weight but you get a very high of bad cholesterol so I really don't wanna see your husband with a heartattack episode 🤔 Vegetables steam-Cooked with grilled chicken with a little bit of extravirgin olive oil

Streamed veggies are definitely on our plates much more nowadays. :) You're right though, there are diets out there that starve what the body needs. There are food groups that people will cut out completely and they end up with a lot more issues. Extravirgin olive oil is so good. I like to mix with it and garlic and use it as a dressing.
