These soft, chewy White Chocolate Macadamia Nut Cookies are my all time favourite 'treat yourself' snack. I don't make them very often, but I had to make something super quick for a potluck work sesh, so well.. why not these?
Just a heads up... these are not the healthy version, they are the real butter, refined sugar, white flour, doughy bites of goodness that you have dreams about.
Nutritionally speaking, these cookies are food for the soul. Treat yourself, because let's be honest, a life without cookies is no life for me.

Now let's get to it...
Here's what you'll need:
- 1 cup of butter (softened)
- 1 cup of brown sugar
- 1/2 cup of white sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups of flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1-2 cups of white chocolate chips or chunks
- 1-2 cups of roughly chopped macadamia nuts
Here's how to do it:
- Preheat oven to 375°.
- In a separate bowl, mix together the flour, salt, and baking soda. Set aside for later.
- With an electric mixer, beat butter, white sugar, and brown sugar until the mixture is light and fluffy (about 4-5 minutes).
- Add vanilla and eggs (one at a time, beating lightly in between). Again, beat until fluffy.
- Add the flour mixture a little bit at a time. Beat until just combined, be sure not to over mix at this point.
- Using a wooden spoon, mix in the chocolate and roughly chopped nuts.
- Drop dough onto parchment paper lined baking sheet (no need to grease). I like smaller cookies so I use a tablespoon sized dropper, feel free to use whatever size you want, but be sure to adjust the cooking time accordingly. Bake for 8-12 minutes.
- Let cool and enjoy!

Those look delicious! I enjoy baking as well, mainly chocolate chip cookies, but am a fan of all sorts of baked goods. I've been working on trying to get the right consistency in the dough so that they don't run flat or form into muffin tops. Any tips would be super helpful!

Hi! I find that refrigerating the dough for a couple hours before baking helps prevent cookies from spreading all over the place in the oven. -- Hope this helps!
