Potato omelette

A recipe for a good and quick potato omelette.

Ingredients:

  • 3 small new potatoes
  • 3 whole eggs
  • 100 g parmiggiano reggiano
  • a small cup of milk
  • salt
  • pepper
  • EVO olive oil

Preparation:

  • Boil the potatoes for about 10 minutes, peel them and cut them into thin slices.
  • Put a little oil in a non-stick pan and fry the freshly cut potatoes.
  • Beat the eggs in a bowl, adding the parmiggiano reggiano, a pinch of salt and pepper and milk.
  • As soon as the potatoes are golden, add the mixture just obtained and arrange it evenly in the pan on the potatoes.
  • Cook 5 minutes per side over medium heat.
