A recipe for a good and quick potato omelette.
Ingredients:
- 3 small new potatoes
- 3 whole eggs
- 100 g parmiggiano reggiano
- a small cup of milk
- salt
- pepper
- EVO olive oil
Preparation:
- Boil the potatoes for about 10 minutes, peel them and cut them into thin slices.
- Put a little oil in a non-stick pan and fry the freshly cut potatoes.
- Beat the eggs in a bowl, adding the parmiggiano reggiano, a pinch of salt and pepper and milk.
- As soon as the potatoes are golden, add the mixture just obtained and arrange it evenly in the pan on the potatoes.
- Cook 5 minutes per side over medium heat.
