Ingredients for Tandoori or Roasted Chicken:
1 kg In-Bone chicken (without skin) - Cut into 8 pieces
2 table spoon salt
2 table spoon ginger garlic paste
2 table spoon red chilli powder
3 table spoon mustard oil
1 table spoon cardamon powder
1 Table Spoon Garam Masala (Indian Masala which is easily available at Indian Grocery Store)
3 Table spoon Plain Curd (Make sure it has not water in it)
1 Tablespoon Lemon Juice
2-4 Tablespoon vegetable oil
1 Red Onion, Tomato and Lemon round cutted for garnishing or as a side salad
Preparation of Tandoori Chicken:
Marination 1:
Take the chicken pieces and have cuts (1-2) into the meat part and put in a bowl. This will help to get all the spices deep inside a chicken.
Add Salt, Ginger Garlic paste and lemon juice on the chicken and rub it well.
Keep aside the bowl for 30 minutes.
Marination 2:
Take another bowl.
Add the mustard oil in the bowl.
Add the chilli powder in the mustard oil and mix it well.
Add Garam Masala, Cardamon powder and mix it well in the mixture of chili powder and mustard oil.
Add Curd into the mixture and mix it well. The final product should be a smooth paste.
Preparation:
Mix the chicken which is kept for 30 min along with a marination 2.
Rub the chicken with marination 2 so well that it covers each and every part of the chicken.
Keep aside the marinated chicken for 2 hrs in a normal temperature or refrigerate it if you are making a chicken next day. The more you keep the chicken marinated more flavored and tasty it will be. I do the marination for 24 hrs before cooking. but you can also do it for 1-2 hrs. The choice is yours.
Once the chicken is ready for cooked, You can use convention Oven, griller to grill it.
The temprature to cook Tandoori Chicken should be between 400F-430F. We want to make sure the juice and spice should remain inside the chicken during cooking and properly cooked and at the same time it should not get dried.
Keep on rub some vegetable oil on top of chicken while it is getting cooked. This will make sure the moisture in a chicken is maintained.
Once you see the chicken in fully cooked and it has got a little black burning color at the side of the chicken. You can take it out of oven or griller.
The Tandoori Chicken is ready to eat. It is best served with an Raw Onions, Tomato and Lemon roundly cut along with a mint chutney (Easily available in an Indian Store).
