Besides my participation in this contest, which seeks for the helthiest and tastier dishes, I wanted to share my Rosted Tomatoes recipe. I hope you like it!.
For my first participation I brought them some roasted tomatoes, taking advantage of the fact that they are in season in Venezuela and therefore they are cheaper and more tasty; with the additional attraction of vacuum storage, which allows them to be consumed later, when they are not in season and their price in the market has increased.
The tomato contains potassium, it is rich in water and in Vtamine C which makes it an excellent ally against hangovers and helps us to prevent colds. Not only this, it has been said that its consumption counteracts the harmful effects of tobacco, helping, not only against lung cancer but against breast cancer.
If we take into account that it is one of the most versatile fruits to prepare and that in passing is one of the children's favorites, we will find in the tomato a healthy and delicious treasure for everyone in the house.
But let's go to the ones that go. The ingredients that we will need are the following:
1 kilo of ripe tomatoes, washed and cut into segments. (view image)
1 tablespoon of salt.
2 tablespoons of sugar (optional though important)
2 bay leaves.
1 tablespoon of rosemary leaves.
1 tablespoon of thyme leaves.
1 tablespoon oregano leaves.
2 cloves of crushed garlic.
1/2 cup of balsamic vinegar. (it serves as any other, but with this one it's great)
1 tablespoon of oil

preparation:
In a large bowl place the tomatoes, add the salt, sugar, vinegar and spices (reserving the oil for when you touch them on the griddle) stir carefully not to mistreat them but enough for the marinade to impregnate them all, cover and we leave them in the refrigerator for approximately four, carefully stirring every so often. In this time the salt will act on the tomatoes, dehydrating them, this will cause that in the bottom of the bowl an important amount of liquid remains. That liquid will be used later.
After the time we remove the tomatoes from the bowl, taking care that the liquid stays inside; Put the iron on the fire and add the oil, when it is hot, put the tomatoes, not all at the same time because the temperature of the iron lowers and we need hot, so depending on the size of the same we must repeat the activity a couple times. When they are golden we vote them and we hope that they turn brown on the other side.
In the image it seems that they were burned, but it is only the caramelization of the sugar, this color is necessary, so do not be scared, but be careful not to exceed the cooking, we need them to be firm inside. At this point our tomatoes are ready for consumption. We can try them and we will realize what we have just done!
Vacuum packaging:
We need glass containers with metal covers, we wash and rinse them well, we put them in a pot with hot water and leave them for about 5 minutes, then with a kitchen tongs or a clean spoon we take them out, we put them upside down so that they are curran Water.
To the liquid of the marinade We add half a cup of water and bring it to the fire until it boils. We turn off and wait for it to rest but not for it to cool down.
With the tweezers or with a clean fork or spoon we put the tomatoes in the jar almost until filling it, leaving space for the liquid. We fill up leaving a space for the air and cover. It is important that the liquid is hot. When placing the caps we make sure that they are well covered and even hot we place them in the refrigerator upside down. The principle says that the temperature difference will cause the hot air inside the bottle to come out and when they cool down (a couple of hours) a vacuum will have been made. This we check when we open the containers listen to a 'pop' that is the air entering the bottle. This method preserves the product for more than 5 months
Our tomatoes can be eaten alone, mixed with ricotta, accompanied with crackers, in salads and in short, as it provokes us. tomates2.jpg
