As i am sitting on the couch looking outside the window writing my thoughts on this electronic device. Reflecting on this roller-coaster we call life. This gift of existing and the gifts within is something i have taken for granted. Our days are usually filled with the tasks of the day. Whenever we sense boredom coming around we rush to entertainment to avoid our enemy called boredom. This makes me wonder how people back in the days when technology was not a thing, avoided boredom. Did they take more time to reflect on life and what was there source of entertainment. How awesome would it be to time travel and interview someone from that time age.
Speaking about our ancestors, a friend of my introduced me to paleo bread. Paleo is a healthy diet that incorporates organic and unprocessed foods including vegetables, fruits, nuts, grass fed meats and eggs. Since grains are not incorporated inside the diet it might be a challenge to create delicious bread. However i am really glad to announce that my first grain free bread was a success.
To replace the flour inside the bread, i used a blend of different kind of seeds. Since their is no flour used for this bread recipe it is also a perfect recipe for people that are sensitive or allergic for gluten. I myself have lived without gluten for about half a year, as i thought that gluten was triggering my disease. However i later found out that my body didn't responded negative to gluten after i took a gluten test. But from this experience i can say that it is really difficult to find delicious gluten free bread. So i am really happy that this bread turned out great! :D

Ingredients
2 tablespoons flaxseed flour
140 gram sunflower seeds
60 gram pumpkin seeds
60 gram sesame seeds
2 tablespoons Ghee or butter
1 tablespoon Tahini
4 eggs
2 tablespoons baking powder
1 tablespoon vanilla powder
a pinch of salt
*Optional: Pumpkin seeds for decoration
Preparations
Blend 100 gram of sunflower seeds and 40 gram of pumpkin seeds in the blender until it forms a flour like consistency. Add the remaining 40 gram of sunflower seeds and 20 gram of pumpkin seeds to the mix.
Add the sesame seeds, flax seeds, tahini, melted ghee or butter, eggs, baking powder, vanilla, salt to form the dough.
Line a baking tray with baking parchment. Add the mixture inside the baking tray and add pumpkin seeds for decoration if desired. Preheat the oven to 180 degrees and bake the bread for 40 minutes. One's done let it cool a bit before you can attack ;)
Who knew that seeds could turn into bread. Besides the fact that you could consider this recipe paleo, gluten free, i think we could also categorize this recipe as low carb :D
