Gingerbread cookies are one of the traditional Christmas sweets. They are part of the typical Christmas gastronomy of Northern Europe, although nowadays they are prepared in many other countries of the world.

The initial recipe came to be known as "gingerbread man", due to the stylized human form with which they were prepared; however, at present, they are made with multiple designs alluding to this holiday season.

People with celiac disease or intolerance to gluten have created their own versions of the recipe with healthy flours that do not have this component.

Rice flour is one of the gluten-free ingredients that can be used in many of the preparations that are usually made with wheat flour.

Each serving of 100 grams provides up to almost 6 grams of protein and, in addition, contains vitamins, minerals and no cholesterol.

Ingredients

  • ½ cup of rice flour (75 g)
  • ½ cup of cornstarch (75 g)
  • 1 teaspoon of yeast (5 g)
  • 1 pinch of salt
  • 3 tablespoons ground almonds (45 g)
  • 3 tablespoons of brown sugar (45 g)
  • ½ teaspoon grated ginger (2 g)
  • 3 tablespoons of butter (60 g)
  • 2 tablespoons of milk (30 ml)
  • 1 egg

Preparation

  • Add the dry ingredients in a bowl: flour, cornstarch, yeast, salt, almonds, sugar, and ginger.
  • Mix everything, moisten it and then add the soft or melted butter and milk.
  • Continue mixing and, when you feel a bit integrated, add the egg and continue stirring with your hands.
  • When the dough does not stick to your fingers, form a ball and wrap it in cling film.
  • Take it to the refrigerator and let it sit for an hour.
  • After this time put the dough on a floured surface and spread it with the help of a rolling pin to obtain a thickness of half a centimeter.
  • Cut the dough with your cookie molds and put them on a cookie sheet with parchment paper.
  • Bake at 180 ° C (with the preheated oven) for 20 or 25 minutes.
  • When they are ready, remove them and decorate them to your liking.

2. Gingerbread cookies with almond flour

This gluten-free recipe is made with almond flour, a low-calorie ingredient that stands out for its omega-3 fatty acid content and essential amino acids.

Ingredients

  • 3 eggs
  • 1 cup of almond flour (150 g)
  • ½ cup of sugar (100 g)
  • 1 teaspoon vanilla essence (5 ml)
  • 1 pinch of cloves
  • 2 teaspoons ground ginger (10 g)
  • ¼ cup ground hazelnuts (38 g)
  • ½ cup of chopped polished fruit (150 g)
  • Rice paper

Preparation

  • Set to preheat the oven to 180 ºC.
  • In a bowl, beat the eggs and mix them with the almond flour, sugar, vanilla essence and clove.
  • Remove so that everything is integrated and continue adding the ginger, ground hazelnuts and chopped polished fruit.
  • After forming a dough, make small balls and press them on the rice paper to give them a thickness of one centimeter.
  • Put them on a tray with butter paper and bake for 15 or 20 minutes.
  • Decorate them to your liking.

3. Ginger and coconut cookies

The last recipe we propose to enjoy the classic gingerbread cookies is made with coconut flour and gluten-free flour.

Together with these, we combine other ingredients of varied flavors that will give us a delicious experience.

Ingredients

  • 2 spoons of orange zest (30 g)
  • 4 tablespoons of honey (100 g)
  • ½ teaspoon grated ginger (2 g)
  • ¼ cup of coconut oil (50 g)
  • ¼ cup of almond cream (50 g)
  • ¼ cup of coconut sugar (50 g)
  • 1 egg
  • ½ teaspoon of yeast (2 g)
  • ½ cup of coconut flour (75 g)
  • ½ cup gluten-free flour (75 g)

Preparation

  • Heat a saucepan and add the orange zest, honey, and ginger.
  • Let it caramelize a few minutes and remove it.
  • In a separate bowl, combine the coconut oil, almond cream, coconut sugar and caramelized mixture.
  • After forms, a paste, add the beaten egg and the yeast.
  • Remove everything so that it integrates well and, finally, add the flours to obtain a malleable mass.
  • Cut pieces of dough and stretch on baking paper to give a thickness of half a centimeter.
  • Cut the cookies with a slicer or mold and put them to bake at 180 ºC.
  • After 15 or 20 minutes, review them and remove them if they are in place.
  • Let them cool and decorate them to your liking.
