#3.0 Cooking with a chilihead ~ Sweet&Hot chilisauce (also in German -> Link)

Hello & welcome dear steemians and chiliheads,

If you like to eat your daily meal with a little heat and sweet on your tongue, I will share my favourite sweet chili sauce recipe with you to make your food more interesting ;-). This sauce fits best with some chicken and rice.

We don´t want to bore our stomach (with ketchup or convenience product ) and there are a lot of healthy benefits through our favourite vegetable - the chili. 

So as always my advice before you start with cooking with all the efforts, make sure, you have the best possible quality of your ingedredients (own garden >= local gardener > supermarket).

But let´s get started now:

  1. Cut your chilis (please wear gloves!), paprika and garlic and sweat everything in a big pot.
  2. Cut your pineapple and mango and mix it separate. Then add the chilis, paprika and garlic in the mixer.
  3. Everything goes back into the pot. Now you can add some water (or pineapple water if you had some from a can).
  4. Heat it up, don´t forget to stir and add the herbs and other ingredients mentioned below.
  5. Now reduce the heat and cook it at least 1 hour to get the right consistency (should be sligthly caramelized).
  6. Try it with the point of a knife and maybe add some salt/ vinegar /sugar if you like.
  7. Fill the sauce with a cone into your cleaned preserving jars and label it to prevent unexpected bitingness.

~ If you need more "heat" add more hot chilis of course :) ~



Ingredient list adequate for 4 jars:

  • 510gram Pineapple, 1 Mango (adjustable at will)
  • 6 medium-hot Chili pods (without pips)
  • 2 red sweet peppers (without pips)
  • 2 toes garlic
  • 6 tablespoonful of water, 6 tablespoonful of (cider/wine) vinegar 
  • 1 tablespoonful of lemon juice (->better storage life)
  • 1 teaspoonful of salt, curcuma 
  • a pinch of cinnamon
  • 100gram coconut sugar / if the sauce isn´t viscous enough add more sugar
  • Oil (I always use coconut-, sesame- and thistleoil)
