How To Cook Pork Mesentery (Flower Chicharon)

One of the tastiest food for me is the fried pork mesentery which makes most of the people get excited in having it (here in my country) when they see some served on the table. It is because it is made crunchy and indeed tasty because of its fat and some meat in it.

It is perfect to be eaten as it is or with your favorite drinks or even rice which in this case I will have it with. It is good that we had ordered some fresh today and now my mother is preparing it so that we can have it for lunch.

It is not the pork "Chilins" which is the intestines but the tissue that connects the intestines to the abdominal wall so it is easier to cleanup. To prepare it is to wash it and boil it with some water, ginger or lemon grass, salt, and some seasonings. Boil it for about an hour and then fry to a crisp for about 15 minutes in a fryer or hot oil submerged.
